KuKu Bora - Excellent Chicken

African Chicken Stew

 

Ingredients (Serves a family)

1 chicken-age does not matter 2 tomatoes, chopped
4 large potatoes, diced 1 bunch dhania (coriander leaves) chopped
2 chopped onions 1 small tin tomato purČe
3 cups stock or water salt and black pepper to taste
1 teaspoon curry powder (optional) ghee or oil for frying

 

Method

  1. Fry the onions, dhania and curry powder.
  2. Joint the chicken, add to the onion mixture and fry for a few minutes, stirring. Add the tomatoes, cook until soft.
  3. Add stock and cook until the chicken is tender, then remove chicken pieces from the stock.
  4. Add the potatoes to the stock, add the tomato purČe, salt and pepper. Cook until the potatoes are soft and the sauce smooth and thick. Add corn flour if the sauce is not thick enough, or if too thick, thin down with cream or red wine.
  5. Remove the chicken meat from the bones, and return the meat to the stew shortly before serving.

Serve hot with chapattis or rice. If serving with Ugali, do not remove the meat from the bones, leave the chicken pieces in the stew throughout.


Vegetable and Fruit Salad

 

Ingredients (Serves 6)

3 carrots grated 2 white onions thinly sliced
4 tomatoes sliced 2 sweet peppers sliced in rings
1 cucumber finely sliced 6 radishes cut into "flowers"
1 crisp lettuce or Swiss Chard spinach 1 cup pre-cooked mushrooms
1 cup whole butter beans, pre-cooked 1 ripe orange in segments
pineapple, cubed 4 purple passion fruits, (grenadillas)
1 mango, cubed 1 apple, sliced
juice of 1 lemon or lime grated cheese for garnish

 

Method

  1. Wash and drip dry all vegetables.
    • Wash fruit and cut up
    • remove seeds from passion fruit to use
    • sprinkle lemon juice over fruit, especially over the apples as this prevents browning.
  2. Arrange lettuce or spinach leaves in a large salad bowl. Put grated carrots in center of the bed of lettuce, working outwards from the carrots, arrange vegetables and fruits according to color contrast.

Serve with a yogurt dressing.
